Bikini Recipe
Serves 10 servings
Ingredients for the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Premix (produces 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Method
To prepare the Syrup: Combine all the ingredients in a pot, bring to a simmer, stirring to dissolve. Then, turn off the stove allowing it to cool down completely. Decant into an sealable bottle, close it and refrigerate it chilled, where it will keep for up to one month.
To make Batch Mix: Combine all the liquids in a big jug, leave to sit for 60 minutes, then filter it preferably using a fine cloth, to ensure it's fully clarified.
When ready to serve: Measure 85ml from the batch mix to a mixing glass containing ice, and stir carefully for about 60 seconds to chill. Filter into a cold coupe glass or a similar vessel, decorate with some cranberries and finish with a light spray with the mandarin essence over the top.
